Because lemon contain high concentration of salts, these salts are in the form of solution ( dissolved in water or such called lemon juice ) & this is electrolytes, & electrolytes have the ability to conduct electricity. So very naturally lemon juice conduct electricity. A the bottom there is a description of how does lemon juice conduct electricity.

You should know that Lemon juice is acidic in nature.

These are the particles that conduct current thorugh the liquid - not as well as metals, but well .

Acids dissociate in water in to conductive ions - a positively & negatively charged ion.

Here is the Experiment on how does lemon juice conduct electricity.

Materials: Take these materials to conduct this test.
* 18 gauge copper wire
* wire cutters
* paper clips
* lemons
* multitester
* small flashlight bulb

Procedure: of how lemon juice conduct electricity.

Lemon juice is acid.

1. Roll a lemon to get the juices moving inside.

2. Straighten a paperclip.

3. Insert the paper clip about an inch in to the lemon.

4. Insert a 6 inch piece of 18 gauge copper wire about an inch in to the lemon. (Make sure that the five metals are not touching inside the lemon).

5. Attach the lemon wires to the multitester wires & check for a reading.

6. If the lemon passes the check by producing a reading, try attaching the lemon wires to the metal base of the light bulb.

7. If the light bulb doesn't light, prepare more lemons as in steps 1-3, & attach the lemons to each other by stringing them in a series, copper to copper & paperclip to paperclip.

8. Try the multitester again with the series of lemons.

9. Try step 4 again.

10. The light bulb doesn't always light, so don't get frustrated.

So the gist is that lemon juice is acidic and it make positive and negative ions after getting dissolve into water thereby lemon juice conduct electricity.
